Photo of the Week – Rosa Bianca Eggplants

This year we are growing Rosa Bianca eggplants, a beautiful Italian heirloom variety from Seed Savers. The plants are prolific and produce tender eggplants with a thin skin and few seeds.

Great pic. Do you have lots of recipes for eggplant? I love it but find it VERY challenging to photograph when cooked. In fact–almost impossible to make it look irresistible.

Our eggplants (including the Rosa Bianca) failed once again. Too many flea beetles, not enough water. I think I’m giving up on them next year and just buying them at the farmers market from now on. I don’t love eggplant enough to bother with its high maintenance issues.

Dinners & Dreams – They are very tasty!
Paula- I have been trying out all kinds of different recipes. So far I have made a lot of Baba Ganoush (and put it in the freezer for winter), Eggplant Parmesan, Balsamic Grilled Eggplant, and many other dishes. You are correct about photographing it cooked- looks like mush on a plate. I’m still working on that one!
Kristin- Oh I’m sorry to hear that. Last year our plants didn’t even flower but I think it was due to poor soil and lack of water. We have had a record wet summer and they are quite happy with all the water.

Do you have a good recipe for babaganoush to share? I’ve been getting humungous eggplants from my CSA, and my family is getting tired of Eggplant parm. And Kristin yes, they like hot weather and lots of water!

Shira- I have been using this recipe from Epicurious as a base for the Baba Ganoush. http://www.epicurious.com/recipes/member/views/BABA-GANOUSH-1236495 Just like hummus, it can be modified to your own taste. I typically add a tiny bit of lemon oil, a dash of red pepper flakes, and more tahini.

I order these seeds from seed savers this year also.. I grew mine in buckets to keep the soil warm and it worked out well. They are really great stuffed.
