Wow! I never knew persimmons were any good. We have a tree in a field that the deer absolutely love. I haven’t heard of anyone around in this rural area of Tennessee making a dish with them. Would love to know what kind of persimmon tree it is and any other dishes.

Kristin- Tree ripened persimmons are probably much softer than the ones I can find here. If you have any Asian markets within striking distance you could find lemongrass there. Also sometimes I can find a squeeze tube version of lemongrass near the fresh herbs in my grocery store (it is not quite the same but would probably work here). I fixed the Lemon Oil note. Thanks!

Hmmm. Intriguing. I don’t know if we still have persimmons out there as I haven’t been into the pasture where the tree lives in about a month. I’m thinking, however, that our persimmons would be too mushy for this salad–they might just disintegrate. And I have no idea where the nearest supplier of lemongrass might be. Which is too bad, because that salad dressing recipe looks DELICIOUS. (Oh, not to be annoying, but the note next to “Lemon Oil” in the vinaigrette recipe says recipe below–but the recipe is actually above. Years of proofreading unfortunately made me attuned to such things.)
